This robust offering is composed of a blend of apples harvested from feral apple trees harvested in 2019, wild fermented and aged a full year in its original fermenter. This dry, naturally clear cider is then transferred to neutral American oak barrels with a healthy addition of freeze pressed bio-dynamic Aronia berries, harvested in 2020 and allowed to very slowly finish fermentation. The result is a slightly smoky, berry forward cider with a mouthful of sharp tannins.
