Rome Beauty apples and well bletted persimmons pulverized together, fermented fully before pressing into neutral French oak barrels and left to age for 18 months in our reserve cellar. Layers of flowers, apple peel and a soft persimmon sweetness balanced with a dry, well-aged cider profile.
